Why is green coffee bean moisture content so important?

If a green bean has too little moisture, it will roast too fast on the outside while the inside remains raw. This often results in over-roasted, flat-flavoured, and bitter coffee.
On the other hand, fungus and mould can grow on green coffee beans containing too much moisture, which can ruin an entire roast.
Moisture also plays a key role in the trading of green beans. If the moisture content is above 12.5% the buyer will likely reject the whole batch. Coffee is traded by weight, and excess moisture will artificially inflate the price of beans.
An accurate moisture tester is an essential tool for any coffee roaster or green bean trader to ensure ideal moisture content.
